Von Ebert Brewing may be one of the new kids in the Portland, Oregon craft beer scene, but they are wasting no time making a name for themselves. Von Ebert opened the doors to its Pearl District location in March 2018, followed soon after by their east side locations at the Glendoveer Golf Course.
The brew team boasts over 20 years of combined brewing experience. Head Brewers Sam Pecoraro and Sean Burke are each in charge of brewing operations and the success of their respective brew teams. Von Ebert’s Pearl District location Head Brewer is Sam Pecoraro. Sam has been brewing in Portland since 2011. Sam graduated from Appalachian State University and the University of Dayton, giving him the rare distinction of being both a Mountaineer and a Flyer. He has brewed at 3 of most renowned breweries in Portland. Von Ebert’s Glendoveer location Head Brewer is Sean Burke. Sean went to brewing school at the Siebel Institute of Technology, in Chicago where he attended the Master Brewer program. Sean has been brewing professionally since 2011. Sean’s expertise lies in barrel aging and sour beer production. The Pearl locations brewers are focused on German style ales and American style IPAs; while these are not the only styles of beer they brew, they are dedicated to the pursuit of clean, easy drinking ales and lagers. The Eastside brew team is devoted to farmhouse ales, spontaneous fermentation and traditional sour styles.
Von Ebert Brewing was named after owner Tom S. Cook’s Great Grandmother Ebert, who was the guiding force of the immigrant family when they came over from Germany to the United States in the early 1900’s. The family name Von Ebert translates to “of the house of Ebert.” Ebert in German means boar. Through marriage, the Cook family’s last name is no longer Ebert, but when they decided to build a craft brewery, they knew they wanted to make their Grandma proud and she continues to be their guiding force. If Grandma Ebert wouldn’t think it was up to point, they won’t do it.
Tom and his wife Emily have just celebrated the birth of their first child Ellie. To commemorate her joining the Von Ebert family Tom and Emily will be brewing a beer in her honor every year until she turns 21. The beer will be a beer/wine hybrid and each parent will get to pick a grape varietal to be used in that year’s beer.
Von Ebert is also very excited to announce the addition of a new executive chef to oversee the culinary operation at both locations. Jackson Wyatt is originally from Southern California, he came to Washington State via the US Air Force. After 6 years of service he moved to Portland and attended Western Culinary Institute. After working at several local restaurants including Henry’s Tavern, Bridgeport Brewing and Cafe Castagna, he opened a top 100 beer bar, NWIPA, with Dan Huish. Recently he helped open the kitchen at Grains of Wrath Brewing in Camas, WA with his wife, Fabiola Ponce Wyatt. The addition of Wyatt to the team will elevate the food menu to match the world-class quality of beer, and solidify Von Ebert Brewing as a premier craft brewery in Portland, Oregon for years to come.
